Eustratius était natif de Tarse. Il fut un grand ascète et homme de prière. Durant les 75 ans qu'il passa au monastère, Eustratius ne se coucha jamais sur son côté gauche pour dormir, toujours le droit. Tout au long des divins Offices, du début jusqu'à la fin, il répêtait en lui-même "Seigneur prend pitié!" Il mourrut à 95 ans.
