Apollonius fut un célèbre ascète Egyptien. Il renonça au monde dans sa quinzième année et se retira dans une montagne où il vécut 40 ans durant se nourrissant de végétation. Après cela, il fonda un monastère dans lequel 500 moines vécurent. Il mourrut en paix en 395.
