Ο Γαβριήλ ήταν επίσκοπος Γάνου και Χώρας. Βρέθηκε στην Κωνσταντινούπολη το 1657 και διαδέχτηκε στον Πατριαρχικό θρόνο τον απαγχονισθέντα, από τους Τούρκους, Πατριάρχη Παρθένιο τον Γ'. Επειδή όμως ήταν αγράμματος, μετά 12 ημέρες, έφυγε από τον Οικουμενικό Θρόνο και ήλθε στην Προύσα, όπου έγινε προεδρικός Μητροπολίτης Προύσας και παρέμεινε για 10 χρόνια. Εκεί κατηγορήθηκε ότι έφερε στη Χριστιανική πίστη κάποιο Μουσουλμάνο και οδηγήθηκε στο Σουλτάνο και Βεζύρη. Αυτοί αξίωσαν από τον Μάρτυρα ν' αρνηθεί την πίστη του και να δεχτεί τον Ισλαμισμό. Με γενναιότητα ο Γαβριήλ απέρριψε την πρόταση αυτή, με αποτέλεσμα να βασανιστεί σκληρά. Τελικά τον απαγχόνισαν στην Προύσα στις 3 Δεκεμβρίου 1659.
