Ὁ Ὅσιος Γεώργιος, βλαστὸς ἀρχοντικῆς οἰκογένειας, ὑπῆρξε κτίτορας τῆς ἱερᾶς μονῆς Ἰβήρων τοῦ Ἁγίου Ὄρους. Ἐπισκέφθηκε τὴν Ἀντιόχεια, ὕστερα ἀπὸ παράκληση τοῦ Πατριάρχου Ἀντιοχείας Ἰωάννου (1051 – 1062), πρὸς παραμυθία αὐτοῦ καὶ τοῦ ποιμνίου του γιὰ τὴν καταστροφὴ ποὺ ἔπαθε ἀπὸ πυρκαγιὰ ὁ ἐκεῖ μεγάλος ναὸς τοῦ Ἀποστόλου Πέτρου. Προσκλήθηκε ἐπίσης, ἀπὸ τὴ βασίλισσα Μαριὰμ στὴ Γεωργία, γιὰ νὰ ἀναλάβει σπουδαῖες ἀποστολές. Μία πενταετία παρέμεινε ἐκεῖ καὶ ἐστάθηκε ἱκανὴ γιὰ νὰ ἐξυψώσει τὰ ἤθη τῆς κοινωνίας. Ἐκοιμήθηκε ὁσιακά, τὸ 1066, στὴν Κωνσταντινούπολη καὶ τὰ ἱερὰ λείψανά του μετεκομίσθησαν στὴ μονὴ τῶν Ἰβήρων καὶ ἐνταφιάσθηκαν στὴ Λιτὴ τῆς μονῆς.
