Ὁ Ὅσιος Γεώργιος ἔζησε τὸν 6ο αἰώνα μ.Χ. Ἦταν μοναχὸς τοῦ ὄρους Σινᾶ κατὰ τοὺς χρόνους τοῦ αὐτοκράτορα Ἰουστινιανοῦ Α’ τοῦ Μεγάλου (527 – 565 μ.Χ.). Στὸ Συναξάρι του ἀναφέρεται ὅτι ἐπισκέφθηκε τοὺς Ἁγίους Τόπους, ἐπὶ Πατριάρχη Ἱεροσολύμων Πέτρου Α’ (524 – 552 μ.Χ.), χωρὶς νὰ μετακινηθεῖ ἀπὸ τὸ ὄρος Σινά! Ὅταν ὁ Πατριάρχης Πέτρος τὸν εἶδε στὰ Ἱεροσόλυμα, τὸν κάλεσε στὴν Τράπεζα. Καὶ ἐπειδὴ ὁ Ὅσιος δὲν πῆγε, ὁ Πατριάρχης ἔγραψε παραπονούμενος στοὺς Σιναΐτες Πατέρες, χαρακτηρίζοντας τὸν ὡς ἀπειθή. Ἀλλὰ οἱ Σιναΐτες Πατέρες καὶ ὁ ἴδιος ὁ Ὅσιος τὸν βεβαίωσαν ὅτι ἐπὶ ἑβδομήντα χρόνια ἀσκούμενος δὲν ἐξῆλθε τοῦ Σινᾶ, οὔτε ποτὲ μετέβη στὰ Ἱεροσόλυμα.
