Pyhittäjä Evstrati syntyi varakkaaseen perheeseen Kiovassa 1000-luvulla. Aikuisiällä hän antoi omaisuutensa köyhille ja meni luostariin. Vuonna 1096 polovetskit (kumaanit) valtasivat luostarin ja Evstrati ja muut munkit myytin orjiksi Korsunissa asuvalla juutalaiselle. Tämä yritti käännyttää munkkeja näännyttämällä heidät, mutta he eivät kieltäneet Jumalaa. Osa munkeista kuoli kolmen päivän jälkeen, osa seitsemän, mutta Evstrati kesti 14 päivää, koska oli tottunut paastoamiseen.
